Casserole with eggs and broccoli

Here’s a delicious recipe for a broccoli and egg casserole:

Ingredients:

  • 2 cups broccoli florets (fresh or frozen)
  • 6 large eggs
  • 1 cup milk or cream
  • 1 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder (optional)
  • 1/4 teaspoon onion powder (optional)
  • 1/2 cup diced onion (optional)
  • 1 tablespoon olive oil or butter (for sautéing)

Instructions:

  1. Preheat the oven: Preheat your oven to 375°F (190°C).

  2. Prepare the broccoli: If using fresh broccoli, steam or blanch it for about 2-3 minutes until slightly tender. If using frozen, just thaw and drain it.

  3. Sauté the onion (if using): In a skillet, heat the olive oil or butter over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.

  4. Mix the egg mixture: In a large bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and onion powder.

  5. Combine ingredients: Stir in the sautéed onion (if using), steamed broccoli, and half of the shredded cheese into the egg mixture.

  6. Transfer to baking dish: Pour the mixture into a greased 9x9-inch baking dish or similar size.

  7. Add remaining cheese: Sprinkle the remaining cheese on top.

  8. Bake: Bake in the preheated oven for 25-30 minutes, or until the casserole is set in the center and lightly golden on top.

  9. Cool and serve: Let the casserole cool for a few minutes before slicing. Serve warm, and enjoy!

This casserole is great for breakfast, brunch, or a quick dinner, and it can be easily customized with other vegetables or meats!
